Protein Matcha Blondies (GF/Vegan)
I have been making this treat on repeat lately. Every time I have an extra old banana laying around, which happens more often than me getting 3 old bananas for banana bread. I’ve been playing around with the recipe quite a bit until I realized I just need to post it because no matter how I make them, they always hit hard. I love to add matcha because I’m always bringing these on the go and eating them as my snack between breakfast and lunch. Feel free to leave out the matcha if you’d like, but I DEFINITELY prefer this recipe with. If you’re caffeine free, sometimes I’ll sub in Hojicha Powder, or cinnamon, or I’ll omit completely, and let these be gooey, soft blondies.
Most of the time I prefer blondies with a little bit of chew so it gives a little bit of a “cookie” element to it, but these are definitely on the softer, gooier side like a brownie. I made these after listening to a few podcast episodes with the lovely Glucose Goddess, and I wanted a healthy sweet treat that added more fiber to balance my blood sugar, and I knew the oat flour and banana would help, but I’m trying to also add more greens and veggies into my diet, so I figured why not throw in some shredded zucchini and no one would ever know! The key to getting these blondies a nice bright green, is a good quality matcha. I always use Matcha Bloom Tea, as they are organic and source their matcha from the best tea farms in Kagoshima. These blondies are SUPER easy to make. Honestly, the hardest part is shredding the zucchini, which by the way, you don’t even need to squeeze out in this recipe. I highly suggest using the protein powder I use from Sprout Living, but if you have another neutral tasting protein powder, give it a try and let me know how it goes! Protein Matcha Blondies

1/3 cup (75g) Sprout Living Pumpkin Seed Protein Powder
1/2 cup (50 g) Tigernut Flour (or sub equal amount of Almond Flour)
1/2 cup (45g) Oat Flour
1/4 cup (30g) Tapioca Flour
1 to 1-1/2 tbsp Matcha Bloom Powder
1 tsp baking powder
1/2 tsp sea salt
1/2 to 3/4 cup dark chocolate chopped
Optional Toppings: chopped chocolate, hemp seeds, flaky sea salt

1 over ripe banana
1/2 cup shredded zucchini
2 extra large eggs
1/3 cup vegan butter, coconut oil, ghee, or butter (melted)
1/2 cup maple sugar
2 tsp vanilla
D I R E C T I O N S
Preheat the oven to 350 and line or grease an 8x8 pan
In a large mixing bowl, mash the banana, and then add the wet ingredients, and mix until incorporated.
Sift the dry ingredients into the wet and mix until incorporated. Fold in the chocolate.
Transfer the batter into the baking pan and bake for 18-22 minutes until a toothpicks comes out of the center with a few crumbs.
