Chocolate Chip Cookie Granola (High Protein, Dairy Free, Gluten Free)
2 Words. HOLY. MOLY. I thought my Superfood Protein granola was good, but this tops it. Chocolate Chip Cookie Granola is the perfect name for it as well. It’s perfectly salted, chocolatey, and has both crunch and chew. Give this granola recipe a try, and I promise you won’t regret it. Not only is it super easy to make, this recipe makes a HUGE batch.
I really should get a proper storage container for my granola but I currently store mine in 2-3 large mason jars that go in the pantry. In the summer when it’s really hot out, I’ll keep any additional jars in the fridge until I’m ready to open them up, but the shelf life of granola is generally 4-6 months. This makes homemade granola GREAT for gifting. I just bought a flat of mason jars and plan to make a batch and attach little thank you notes to the lids.
I’ll admit though. This granola is tough to give away it’s so good! Between my friends and family, we all have a tough time sharing. I LOVE this Chocolate Chip Cookie Granola. I break it into big chunks and snack on it, but it’s also wonderful as a topping for oatmeal, smoothie bowls, and dairy-free yogurt. 1 1/2 cup Sprouted Rolled Oats
1/2 cup unsweetened desiccated coconut
1/2 cup walnuts
1/2 cup cashews
1/2 cup medjool dates pitted and cut into chunks
1/3 cup buckwheat groats
1/3 cup pumpkin seeds
1/3 cup sunflower seeds
2 tbsp chia seeds
OPTIONAL: 4 scoops collagen peptides

1/2 cup maple syrup
1/4 cup buttery coconut oil (melted)
2 tbsp unsalted cashew butter
2-3 tbsp cacao powder
1 tbsp vanilla extract
