Easy Peach Compote with Lemon Thyme (Vegan, GF, Refined-Sugar Free)
This recipe is inspired by an AMAZING vegan and gluten free ricotta toast I had from a local spot in LA called Honey Hi. The perfectly toasted gluten free buckwheat sourdough was topped with a fluffy cloud of almond ricotta, smeared with a generous layer of luscious homemade local peach jam, drizzled with pomegranate molasses, and topped with fresh mint and bee pollen, Unfortunately, this toast was one of those “Farmer’s Market Specials” they only had for the day, so I’m stuck here daydreaming and drooling about it. And no, I don’t have a picture of it because by the time I had this gorgeous toast in my hand, I was hangry as hell and once I started eating, I couldn’t stop, Sorry, not sorry. HOWEVER, I’ve been wanting to try and recreate this dish, so the first step to doing so is recreating this peach jam. I think I nailed it everyone. It’s perfectly peachy, slightly herby from the lemon thyme, and has an amazing consistency. Honestly, this compote is more of a jam; it’s nice and thick but also moves enough to mix well into yogurt or oatmeal.
And when I say this recipe is easy, I really mean it! You can also play around with the recipe by substituting different herbs or even a different stone fruit! If you come across this recipe and peaches aren’t in season, feel free to used frozen peaches. Just make sure you defrost them in a strainer before hand to get rid of the excess liquid. Another nice little mix up with this compote is to replace the water with some booze. I’ve done this peach compote with bourbon too and YUM.

Easy Peach Compote with Lemon Thyme
I N G R E D I E N T S
2-3 Pounds peeled and diced organic peaches (about 6-8 peaches)
3 tbsp Lakanto Golden Monkfruit Sweetener
1 tbsp lemon juice
2 tbsp water (or Bourbon if you’re feeling boozy!)
Leaves from 3 springs of lemon thyme
Pinch of Salt
D I R E C T I O N S
Add peaches, monk fruit, lemon juice, water or bourbon, lemon thyme, and salt to a medium sauce pan.
Mix together and bring to a low boil over medium heat.
Once the mixture comes to a boil, lower the heat and simmer until the mixture thickens, about 30-35 minutes. Stir occasionally to make sure the peaches on the bottom burns!
Optional: I like my compote to be spreadable, so if you’re the same, take a fork and mash the peaches until the compote reaches your desired consistency. Do this toward the end of the cook time when the compote has reached a good level of thickness.
Use immediately or transfer the compote to a clean, sealable jar. The mixture will thicken slightly once cooled.
